What is ramen?

A Google search for “Dinner in sydney north shore” is likely to show a few restaurants which make ramen. This japanese meal is loved not only in australia, but all over the world.

Simply put, ramen is a type of noodle soup originating from japan. However, the make-up of a perfect steaming bowl is more complex. ramen can be separated into three parts: broth, noodles & toppings.

The taste of umami

the focus of Ramen is the particular broth used. There are different types, including “shoyu” (soy sauce), “Shio” (salt) and “Tonkotsu” (pork). the richness of the broth is a key factor in judging the merit of a ramen bowl, and it can take many hours of simmering ingredients (such as pork bones) to create the perfect tasting soup.

This taste is often called “umami”. It’s one of the five basic tastes, and is likened to “savouriness”. If you’ve enjoyed japanese food in north sydney, you’re likely to have experienced umami before.

Whilst the broth is important, the type of noodle used can enhance or detract from your dining experience. ramen noodles come in different sizes (thin or thick) and shapes (straight or curly). It wouldn’t be fantastic if your noodles were too thin, and got lost in the broth!

Also contributing to the flavour and texture of the dish is the toppings used. you may see a slice of “chashu” (roasted pork) in addition to “tamago” (soft-boiled egg), nori (seaweed) and menma (bamboo shoots). Depending on what ramen bowl you have chosen, there are other toppings too.
